Nilagang Baboy Recipe

Nilagang Baboy is a traditional Filipino boiled pork soup that features a variety of vegetables. It's a comforting and simple dish that's perfect for family meals. Here's a basic recipe for Nilagang Baboy:

Ingredients:

1 kg pork belly, cut into chunks

4-5 medium-sized bananas (saba), peeled and sliced into halves

3-4 corn on the cob, each cut into thirds

1 large sweet potato, peeled and sliced into chunks

2 medium-sized plantains (or regular bananas), peeled and sliced

2 medium-sized taro root (gabi), peeled and sliced

1 bundle string beans (sitaw), cut into 2-inch lengths

1 medium-sized cabbage, quartered

Fish sauce (patis) or salt to taste

Pepper to taste

Water for boiling

Optional: Puso ng saging (banana heart) slices


Instructions:

In a large pot, place the pork belly chunks and add enough water to cover the meat. Bring it to a boil, then let it simmer until the pork is tender. You can skim off any foam that rises to the surface.

Once the pork is tender, add the sweet potato, bananas (saba), corn on the cob, taro root (gabi), and plantains. Simmer until the root vegetables are almost tender.

Add the string beans (sitaw), banana heart (puso ng saging), and cabbage. Season the broth with fish sauce (patis) or salt and pepper to taste.

Continue simmering until all the vegetables are cooked, and the flavors have melded. Adjust the seasoning if necessary.

Remove from heat and serve hot.

Enjoy your Nilagang Baboy as is or with a side of fish sauce with calamansi or soy sauce with crushed red pepper as a dipping sauce.


Nilagang Baboy is often enjoyed with steamed rice and can be served with dipping sauces for added flavor. Feel free to adjust the ingredients and quantities based on your preference.
