Ingredients:

1 kg pork shoulder or pork belly, sliced into thin strips (about 1 inch wide)
1 cup soy sauce
1 cup banana ketchup
1/2 cup brown sugar
1/4 cup calamansi juice (or lemon juice)
1 head garlic, minced
1 onion, finely chopped
1 teaspoon ground black pepper
Bamboo skewers, soaked in water for at least 30 minutes
Cooking oil for brushing

Instructions:

In a bowl, combine soy sauce, banana ketchup, brown sugar, calamansi juice, minced garlic, chopped onion, and ground black pepper. Mix well to create the marinade.

Place the sliced pork into a large bowl or a zip-lock bag and pour the marinade over the meat. Make sure each piece is coated evenly. Marinate the pork for at least 4 hours or, preferably, overnight in the refrigerator.

Preheat your grill or barbecue to medium-high heat.

Thread the marinated pork slices onto the soaked bamboo skewers, making sure to weave the skewer through the meat.

Brush the grill grates with oil to prevent sticking. Place the pork skewers on the preheated grill.

Grill the pork skewers, turning occasionally and basting with the marinade, until the meat is cooked through and has a nice char. This usually takes about 10-15 minutes.

Once the pork is cooked, remove the skewers from the grill and let them rest for a few minutes.
