Lechon Kawali is a popular Filipino dish that features deep-fried crispy pork belly. Here's a simple and delicious recipe for you to try:

Ingredients:

1 kg pork belly, slab or in individual slices

Water for boiling

Salt for rubbing

Cooking oil for deep frying

Soy sauce and vinegar dipping sauce


Instructions:

In a large pot, place the pork belly slices and add enough water to cover them. Add a generous amount of salt.

Bring the water to a boil and simmer the pork belly until it becomes tender. This may take about 45 minutes to 1 hour. You can also use a pressure cooker to speed up the process.

Once the pork is tender, remove it from the pot and let it cool. Pat the pork belly dry using paper towels. It's important to ensure that the pork skin is thoroughly dry to achieve crispiness when frying.

Heat a deep fryer or a deep, heavy-bottomed pot with enough cooking oil for deep frying. The oil should be hot but not smoking, around 350-375°F (175-190°C).

Carefully lower the pork belly into the hot oil, skin side down, using tongs. Fry until the skin becomes golden and crispy. This usually takes about 15-20 minutes.

Flip the pork belly to cook the other side until it becomes golden and crispy as well.

Remove the Lechon Kawali from the oil and let it drain on a wire rack or paper towels to remove excess oil.

Slice the crispy Lechon Kawali into serving portions.

Serve hot with a side of soy sauce and vinegar dipping sauce.


For the dipping sauce:

Mix together equal parts soy sauce and vinegar. You can add chopped onions, garlic, and a dash of pepper for extra flavor.
